Vision, Nutrition and Cataracts

A cataract is the clouding of the eye's lens and is one of the most commonly-performed procedures in the U.S. The federal government spends more than $3.4 billion annually treating cataracts through the Medicare program. However, it has been estimated that, if the progression of this eye disease could be slowed down by a decade or so, a 45% drop in annual cataract surgery would follow.

On reflection, though, the nutrition link with secondary cataract is a valid connection to make.

Good nutrition can play a preventative role in delaying the onset and/or progression of the cataract. Here we are referring to age-related cataracts which occur when protein clusters up in the lens and causes opacity, or when the lens discolors due to the effects of aging.

Not all cataracts however are age-related, and therefore the nutrition link is not as important in the case of:

It could be argued that eating a healthy diet in the first place creates a virtuous circle by reducing the incidence of diabetic retinopathy, thereby reducing the number of surgical procedures to rectify the condition and reducing, in turn, the incidence of secondary cataract formation.

Cataract formation, however, is predominantly a condition associated with aging and is an acquired vision defect. Lifestyle changes, then, and changing patterns of behavior – stopping smoking, wearing sunglasses to block out harmful ultraviolet rays and eating a healthy diet – can all contribute to the prevention and retardation of cataract formation.

Let's examine more closely the connection between nutrition and cataracts. Lutein and zeaxanthin, which assist in the absorption of Vitamins C and E to counter damaging free radical activity in the eye, are found, like Vitamin C, in colorful fruit and vegetables. Kale and Collard greens top the list of good food sources for both lutein and zeaxanthin; broccoli, corn and peas are fairly good sources of lutein and zeaxanthin while persimmons and tangerines offer the least amount of these beneficial carotenoids.Nutrition promises to be one important weapon in the prevention and delayed progression of cataracts. Eat wisely, take nutritional supplements and the benefits over time could be plain to see!

Basic Nutrition Advice That Everyone Needs To Follow

Many people have a problem reaching goals they have in their diet and exercise program simply because they are not knowledgeable about basic nutrition. If you are trying to lose weight you should know that reaching your weight goal is simply a matter of burning more calories than you take in.

You should also be concerned with improvement in your overall health at the same time, which is why having good nutritional skills are so important.

Poor nutrition can lead to higher risks for of a variety of health problems including heart disease and cancer. You need to eat a balance of healthy foods and watch your caloric intake at the same time. A proper diet reduces cholesterol, blood pressure, and aids in weight loss.

For optimal body function you must eat the right combination of nutrients. One of the most important of these, contrary to some popular diets, is carbohydrates. They are used to create glucose which can be used right away or stored to use later. An over abundance of carbohydrates will cause your body to store the extra glucose as fat. Carbohydrates are broken into two categories, simple and complex. Sugars fall into the simple category, while starches and fibers are complex carbohydrates.

Protein is another crucial nutrient for your body; they help your body build and repair muscle and other tissues. They also function in the creation of hormones. Do not fall into the trap of eating excessive amounts of protein, like carbohydrates, excess protein is stored as fat. The two main protein sources are animal and vegetable. You need to avoid a high consumption of animal protein because too much of it can cause high cholesterol due to the high levels of saturated fat.

Your body must also have a certain level of fat intake. Fats are classified in two categories, saturated and unsaturated. Saturated fat is the bad kind and puts you at risk of health problems. Unsaturated fat is healthier, but if it is refined, it can become saturated fat. Vitamins of course are also on the list of required nutrients. All vitamins perform different jobs within the body and work with your body's metabolism to increase energy levels. Many studies have proven that certain vitamins can also prevent disease such as vitamins A, C, and E, also called antioxidants, which assist with the prevention of coronary artery disease by helping to prevent plaque build up on artery walls.

Your body also needs minerals and trace elements which are used in many different body processes. Chlorine is essential for digestion, calcium and phosphorus are essential for strong bones and healthy teeth. Your body also needs salt, but not more than 2400 milligrams per day, as it can increase your blood pressure.

Make sure that you eat food as close to their natural state as possible and avoid excessive amounts of animal protein. Eat at least two cups of fruits and two cups of vegetables daily and drink a gallon of water spread out over your day.

Minneapolis Schools Work to Improve Physical Education and Nutritional Programs

Minneapolis Schools Honored by Governors

Minneapolis Schools have made numerous changes in order to create better physical education and nutritional programs with the goal to make the healthiest schools in the state. Minneapolis Schools were honored for the many steps that they have taken to improve student fitness at all the schools. Minneapolis Schools have instituted several changes including: changes in school lunch menus, physical education taught through a fitness approach, and participation in the President’s Active Lifestyle Award program.

These changes were mentioned by Minnesota State Governor Tim Pawlenty when he was speaking about healthy schools across the state at a Saint Paul YMCA with Arkansas governor, Mike Huckabee.

The governors spoke to students about the importance of exercise and nutrition. Governor Huckabee was there to provide an example of how exercise and proper eating can work; Huckabee has lost over 100 pounds. To show the change Huckabee’s weight loss has had on his life, the governors briefly carried a student on their backs to show how much extra weight Huckabee had been carrying with him.

Minneapolis Schools Take Part in the Presidential Active Lifestyle Award

The Presidential Active Lifestyle Award program is designed to help students in the Minneapolis Schools make and keep their commitment to living an active life. The program helps students make realistic goals about fitness. This program helps the students by setting rules to follow and providing fitness logs so students can track their progress. Students who participate in the program are eligible for Presidential Active Lifestyle Awards when they perform activity beyond the set fitness goal of sixty minutes a day for youths under 18 at least 5 days per week, for a total of 6 weeks. As an alternative you can count your daily activity steps using a pedometer.

A pedometer is a small device that automatically counts the number of steps a student takes; many Minneapolis Schools physical education programs have them. The Presidential Active Lifestyle Award program sets different pedometer goals for different ages and genders: Girls 6 to 17 - At least 11,000 steps a day; Boys 6 to 17 - At least 13,000 steps a day or Adults 18 or older - At least 8,500 steps a day

The Presidential Active Lifestyle Award program in Minneapolis Schools allows lots of different activities to count towards the awards, as long as the activity uses muscle groups and burns energy. Examples of appropriate activities are taking a long walk, playing basketball, tennis or taking an aerobics class. Even doing chores around the house if you do these activities in addition to what you normally do. The goal of the Presidential Active Lifestyle Award program is to have students meet or exceed the daily activity goal of sixty minutes a day for children under 18 at least 5 days a week, for a total of 6 weeks but participants can take up to 8 weeks to complete the program.

An important element of the program is having students keep a personal activity log. The online personal activity log allows the students to track how long through the Presidential Active Lifestyle Award website. Minneapolis Schools have allowed participants to uses school computers to participate in the program. The Presidential Active Lifestyle Awards are awarded to those participants who have reached their fitness goals. The online log will automatically inform the student when an award has been reached, after that the students can order the Presidential Active Lifestyle Award online or by mail. The program always the students to continue earning awards or move into the more difficult challenge level of the Presidential Champions program.

Smart Bodybuilding Nutrition Tips That Work

It never ceases to amaze me how eager bodybuilders are to get meaningful results quickly. They are so eager that they end up listening to whoever they can. This usually leads to what I call "bodybuilding confusion." I am convinced there is a most effective, researched way to train, and a non-productive way to train. Bodybuilders, seek the productive, proven methods.

Every bodybuilder is looking for that secret bodybuilding nutrition tip that catapults muscle building results. Yes, no matter what, it will take consistent, determined effort. However, there is one researched weightlifting nutrition tip that will surely make a difference in adding more muscle to your physique. Bodybuilding nutrition is not just a matter of what you ingest, but more importantly, the time fame of when you ingest these precious nutrients.

By taking in specific nutrients at a highly optimal time in the anabolic muscle building process, you can gain an inside advantage in the bodybuilding growth process. Most bodybuilding enthusiasts don't even think about this. Some eat to get big. This theory is incorrect. Train to get big, and supplement food, the correct way, to provide a positive muscle growth environment.

However, such things are taking in the proper nutrients within one hour of training can give a bodybuilder just enough of an inside advantage that they begin growing like crazy. Over the past ten years, there has been ample research on the effects of carbohydrates, and protein on the anabolic, or muscle building, response to muscle building. One researcher, Dr. Paul Cribb has drawn some rather beneficial conclusions resulting from his current research studies regarding this hot bodybuilding nutrition topic.

The big question is what should be consumed either prior to, or after a weightlifting workout. Other questions are what kind of timing; and is there an advantage paying attention to bodybuilding nutrition? These big questions have changed the way we think of anabolic nutrition today. Dr. Cribb and others have aggressively answered these questions, and more from diligent research studies.

In a recent study, Dr. Cribb looked at different combinations of nutrients along with their ingestion timing, and compared them to the effects on bodybuilding. This particular study was very important in identifying the what's, when's, and how's of anabolic nutrition. His conclusions will not only yield valuable fat burning muscle, but also add functional strength.

As a result of the research studies, his main bodybuilding nutrition tip is to combine whey protein, carbs, and creatine all together into a drink which aids in muscle and strength development. According to the research, there was a very positive correlation between these three bodybuilding nutrition nutrients, and muscle building.

Now the next crucial point that needed clarification is the best time to take this muscle building cocktail. His study confirmed that ingesting this weightlifting nutrition cocktail prior to and immediately following each intense bodybuilding workout showed a positive connection between the timing of taking this drink and significant muscle development. His study had other sample groups take the drink at different time periods throughout the day. Interesting enough, the group taking the anabolic nutrition cocktail immediately before, and after an intense workout showed the greatest strength and muscle mass gain. Thus, is it safe to conclude it doesn't matter what you take, but when you take it. The timing of taking the nutrients are crucial to bodybuilding success.

In bodybuilding nutrition there is a period of time immediately following training known as the "window" to ingest these three nutrients. If you miss this limited time, generally within one hour after a hard workout, the muscle building results will not be as good.. During this "window of opportunity" your body will take the good hi-glycemic index carbohydrates and protein, and transport them into the liver, and muscles to begin the lean tissue building, or bodybuilding process. Thus, these nutrients will be used for the purpose of recovery, and getting ready for the next exercise bout, and not intended to be stored as adipose tissue.

There have been several studies concluded throughout the years on pre and post workout nutrition, and the effects of protein synthesis. Another study suggested a spike in protein synthesis when a carbohydrate, and protein bodybuilding nutrition supplement drink is ingested immediately before a high intensity bodybuilding workout. In this particular study, there was an increase in protein synthesis when the bodybuilding nutrition supplement drink was ingested prior to working out as opposed to after.

In summary, experts recommend using 30-50 g of whey protein, with 75-100 g of hi-glycemic index carbohydrates, and 3-5 g of creatine monohydrate, combined in drink form, immediately before, and after each bodybuilding workout. A good bodybuilding nutrition strategy is to drink one half of the drink before, and one half after each bodybuilding training session.

These two bodybuilding tips will make a tremendous difference in your bodybuilding training program. As you now know, timing is everything. Make sure you are drinking the exact cocktail of nutrients prior to, and following hi-intensity workouts in order to maximize the nutrient uptake, and aid in the protein synthesis process.

Choosing A Multivitamin/Mineral Supplement -- Which Nutrition Insurance Plan Is Right For You?

A multivitamin/mineral is like a dietary insurance policy to ensure that even on the days you eat pretzels and a cookie for lunch, your body doesn’t miss out on vital nutrients. Multivitamins, like clothing, work best when the size is right. Women, men, and children have very different nutrient needs in terms of specific nutrients and the amounts of important nutrients. A specialized multivitamin/mineral supplement ensures that nutrient needs are met. Keep in mind, however, that a multivitamin/mineral supplement is meant to do just what its name implies, supplement – not replace – a healthful diet.

• Children need less in terms of amounts of vitamins and minerals (since they’re smaller), but the importance of proper nutrient levels is no less during childhood. Not only do height and weight increase at incredible rates during this time, but brain function and general coordination are quickly developing, as well. At a time of rapid and vital growth and development, but potentially inconsistent eating habits, a multivitamin/mineral that is specially formulated for children can help a child get all of the nutrients he or she needs – even the picky eaters.

**Adolescents’ nutrient needs begin to change as they reach puberty -- right around the same time that busy schedules, peer pressure, and school lunches can wreak havoc on eating habits. Girls’ iron needs nearly double (from 8mg/day to 15mg/day) when menstruation begins. This is the time that they should begin taking an adult formula with iron. Calcium requirements increase for boys and girls starting between ages 9- to13- years of age, due to rapid growth and bone development. An additional calcium supplement is often needed, especially for teens that do not eat dairy products. Boys’ needs for more B vitamins, as well as larger quantities of most nutrients, make it appropriate for them to begin taking an adult formula at this time as well.

• Women of childbearing age have a particular need for iron, calcium, vitamin D, and folic acid in order to build and maintain strong bones, keep energy levels high, and maintain necessary nutrient stores should they become pregnant. Most multivitamin/minerals will not have 100% of calcium or vitamin D, so an additional supplement containing these nutrients is usually needed. A formula that provides 100% of the daily value of folic acid, a B vitamin, is extremely important in the prevention of certain birth defects, should a woman become pregnant. Sufficient iron is vital to ensuring that oxygen travels throughout the entire body (including the brain!), fighting fatigue, and keeping the metabolism revved up.

• Men have increased nutrient needs due to higher metabolic rates and a larger proportion of total body muscle mass. Overall, needs are higher for B vitamins like thiamin, niacin, and riboflavin and less iron than women do. The B vitamins work together to metabolize food and convert it to fuel for energy production, maintain sufficient levels of sex hormones, and remove toxins from the body. Meeting these increased nutrient needs helps to achieve optimal physical and mental health. Additionally, men can benefit from certain plant compounds, like lycopene, which have been shown to decrease the risk of prostate cancer, the leading cause of cancer death among males.

• Adults over fifty have higher needs for vitamins B6, D, C, and calcium, and lower iron requirements. In addition, our bodies become less efficient at absorbing vitamin B12 from food. Vitamin B12 is a key nutrient in preventing anemia by maintaining a healthy number of red blood cells. It also keeps the nervous system (the control panel for your entire body) working properly. “Senior Formula” multivitamins account for these specific needs and are often enhanced with compounds like lutein and lycopene to support eye and prostate health. However, a regular adult multivitamin/mineral without iron will also meet basic needs. An additional calcium/vitamin D supplement is usually necessary in order to meet the increased needs of older adults.

**Postmenopausal women have increased needs for calcium related to hormonal changes, while iron needs are cut in half due to the ceasing of the menstrual cycle. A general adult multivitamin without iron, or a senior formula plus an additional calcium/vitamin D supplement, is recommended for women who have completed menopause.

The Role of Nutrition in Reducing AMD-linked Vision Loss

Age-Related Macular Degeneration (AMD) is an acquired vision disorder and, together with cataracts, a leading cause of legal blindness in the over 60s. Since AMD affects the central part of the retina (macula), which is responsible for acuity of vision, many activities, including reading, writing, sports and driving can become extremely difficult tasks for sufferers to perform.

Type II diabetes is increasingly common in the Western world often as the result of over-eating on junk food. By raising blood sugar levels, diabetes can cause changes in the retina severe enough to impair both visual acuity and color vision.

What part, then, can nutrition play in relation to this eye disease? Given that approximately 10 million Americans suffer from early onset AMD and half-a-million from significant loss of vision due to late-stage AMD, the question is an urgent one. The disease's severity and irreversibility adds to the urgency.

Research has suggested that AMD develops with the reduction of pigment in the macula. This retinal layer plays a dual role: it filters out harmful blue wavelengths of light and mops up free radicals found in large concentrations in this area. Free radicals damage the cell membranes and the macular pigment.

The theory goes that nutrition, in particular certain antioxidant compounds, can reduce the harmful effects of free radicals and, as a consequence, may act to slow the progression of AMD. A recent large clinical trial conducted by the National Eye Institute (NEI) supports this theory.

Let's examine its methods and findings. The effect of a high dose antioxidant, vitamin combination (C & E) plus zinc, was tested on participating patients with advanced signs and symptoms of AMD. The doses tested were as follows:

The findings supported the hypothesis that high levels of antioxidants are an effective treatment in slowing the progression of AMD. For this high-risk group of patients it was found that the supplement reduced the risk of developing advanced AMD by about one-quarter and reduced vision loss by about one-fifth.

The NEI concluded that, for people over the age of 55 who display signs of intermediate to late vision loss due to AMD, taking a high-dose vitamin combination plus zinc similar to that used in the clinical trial, is highly desirable. 300,000 people at high risk from AMD- associated vision loss would benefit from the treatment. It has indeed proven to be an effective means of limiting the disease in patients with advanced signs and symptoms of AMD.

Given this positive association between nutrition and AMD, it is interesting and helpful to compare the levels of Vitamin C and E provided by eating five daily servings of nuts and seeds, with the dosage taken in the trial.Choosing pigment-rich fruits and vegetables (oranges, strawberries, green peppers, broccoli) can provide more than 100 mg. Vitamin C daily. Two daily servings of nuts and seeds (almonds, peanuts, sunflower seeds) can provide 8-14 mg. Vitamin E (11.9-20.8 IU).

The above recommended dietary allowances (RDA), however, fall well short of the levels associated with health benefits to vision (see doses above) illustrated by the WEI's Age-Related Eye Disease Study. This is not to say, though, that good food sources of antioxidants should be overlooked in favor of supplements: the bowels and colon benefit from the anti-carcinogenic properties of fiber-rich foods.

The wisest option for those who display early signs of AMD, have a genetic predisposion for the disease and are over 50, is to eat a healthy diet and supplement this with good-quality, organically-sourced nutrients. Such a dietary regime is vitally important when put into the context of current average intake. Over half of Americans get much less than 100% of their Vitamin C RDA from their diet and more than 90%, less than 100% of their Vitamin E RDA.

Finally, it is important to emphasise that the use of good nutrition based on high levels of antioxidants cannot turn back the clock and reverse the damage already caused by AMD. However, many patients with AMD can experience a delay in the advancement of their condition if a diet high in antioxidant-rich foods and supplements is adopted.

Maureen P Cook Maureen Cook writes articles for publication from her home in England. In this article, she explains the importance of nutrition in combating AMD. To read more, go to Vision and Nutrition.
